Meatless Monday Snack Idea: Sexy Veggie Approved Apple Nachos
We love this idea! It’s certainly a lot healthier than the usual nachos piled high with fake cheese, meat, and other fattening toppings! Oh and this one is vegan too for all our vegan followers out there. We can thank Manifest Vegan for providing this recipe and photo.
Here’s how you make this fun little snack:
3 crispy and slightly tart apples
1 tsp lemon juice
3 tbsp creamy natural peanut butter
1/4 cup sliced almonds
1/4 cup pecans
1/4 cup flaked unsweetened coconut
1/4 cup vegan chocolate chips
Slice up some apples - pretty thin so you can eat the slice in a couple bites. Manifest Vegan recommends spritzing the apples with lemon juice so they don’t brown too quickly.
Melt some peanut butter until it’s runny and drizzle over the apples. Next, top the apples and peanut butter with unsweetened flaked coconut, sliced almonds, a few pecans, and the best part - chocolate chips! Drizzle entire plate with a little more peanut butter.
